Roasted Sweet Potato, Apple & Pomegranate Salad with Maple-Dijon Vinaigrette

Delicious, festive roasted sweet potato, apple & pomegranate salad with sunflower seeds, goat cheese and a maple-dijon vinaigrette. This salad is super easy to prepare and makes a great holiday side dish or a lighter lunch or dinner!



This is the time of year we all eat a little on the heavier side. A green meal will do the body some good; plus, this salad is so delicious you’ll actually enjoy taking a little walk on the lighter side.


It’s filled with juicy honeycrisp apples, which are my absolute favorite because they’re the perfect amount of sweet with just the right amount of crisp, and they make the best addition to this salad. The pomegranate arils, creamy goat cheese crumbles and roasted sweet potatoes add an amazing variety of flavor, making this a favorite salad recipe of the season!



What about the protein?


When I made this salad, we were craving a super-light meal and didn’t add additional protein. However, there are several options that would work very well and be just as delicious in this salad!


Roasted Chickpeas- Drain and rinse 1 can of chickpeas to add to this salad; or, drain and pat dry the chickpeas before laying them flat on a baking sheet and roasting in the oven on 350 for 10-12 minutes (until they begin to crisp)


Chopped Bacon- Bacon makes nearly all recipes better. The same is true for this one. Cook 6-8 pieces of bacon; then, chop and add to the salad.

Grilled Chicken (or fried if you’re not counting calories)- Grilled chicken is another great choice of protein to add to this salad. Keep the pieces of chicken smaller and bite-sized for best results!
