Mango, Kale & Roasted Corn Salad with Cilantro-Lime Dressing

Mangos, chopped peppers, cucumbers & onions, sliced avocado and cotija cheese, tossed with a tangy cilantro-lime dressing. This salad takes no time to make, and it's sooo yummy!


I've made salads with fruit many times...usually with berries, and they're all super yummy. But, mango is, by far, my favorite fruit so I wanted to make a salad that would be sure to give me a mouthful of mango with every bite. This one is fully loaded, and it's beautiful with the mix of all the yellows and greens. I am pretty much in love, and I know you will be too the second you try it!


The details:


It's super simple to make because you don’t have to cook a thing, so after the prep, the recipe is basically complete! The cilantro-lime dressing is out of this world good, too. I'd drink it straight from the bowl if I didn't have to use it for the salad...not even kidding.


It's super tangy, and I added a little bit of Tajin, a spice that can be found in Walmart's Mexican food section. I also added a little tahini, which has a nutty, earthy flavor that balances the tanginess of the lime perfectly. All you do is throw all of the ingredients for the dressing into a food processor and blend until smooth, and it's ready to go.



The salad is a mix of chopped kale & spinach, lots of diced mango, sliced baby cucumbers, chopped yellow bell pepper, chopped cabbage, sliced red onion, an avocado and some lightly toasted sunflower seeds. It's super quick, super simple and super yummy--the ultimate trifecta.
