Creamy Hot Spinach Dip
Everyone's favorite party-food staple!
When I was a kid, I wanted to order spinach dip as an appetizer EVERY TIME we went somewhere that had it on the menu. It's something about the warm, creamy texture that makes me feel comforted with every bite. Most restaurants prepare their spinach dip with artichokes, however, and while I don't mind them, I don't like getting to the bottom of the bowl and having nothing left but massive chunks of artichokes.
So, when I make spinach dip, I leave the artichokes out. Don't get me wrong; I am not saying you can't use them, but if you do and you're making dip for me, chop those babies up!
For this particular recipe, I was preparing for a New Year's Day themed charcuterie board, so I wanted snack food and I wanted all of it to be "lucky." We all lived through 2020 AND 2021, so we could use a little bit of luck for this year if you know what I'm saying. Man! Those years were TOUGH.
The low down on this spinach dip--it is super easy to make. No chopping (ahem..unless you're including artichokes), no sautéing--just throw it all in a mixing bowl and then bake it in the oven for a just few minutes until it's bubbling and VOILA, it's done.
INGREDIENTS:
1 bag of frozen spinach
1 8-ounce block of cream cheese, softened
1 1/2 cups shredded mozarella
1 cup sour cream
1/2 cup grated Parmesan cheese
1/4 cup real bacon bits
1/4 teaspoon salt
DIRECTIONS:
Mix all ingredients together until well combined and pour into a pre greased baking dish. Bake on 375 for 20 minutes.
