I made some tortellini soup last winter, and it was a major hit. There's just something special about pasta when it's paired with Italian sausage. I was craving something similar when I made this Ravioli Soup, but I wanted a creamier tomato base this time, and I am very pleased with the result!
You can bet I will start just about every soup I make with the same mix of chopped onion, carrots & celery. The trio adds the perfect amount of flavor to build upon regardless of the soup you're making. Since the vegetables were cooking all day in the crockpot, I didn't even worry about simmering them first--just tossed them in the crockpot with the browned Italian sausage and chicken broth. For the record, this is the exact same base I use for my tortellini soup, cabbage soup, sausage & potato soup + more. It really is quite simple, and once you memorize the ingredients, you can breeze right through these steps for your own yummy soup recipes.
For the Ravioli Soup, since I was craving something a little more savory, I opted for a tomato base with a can each of diced tomatoes and crushed tomatoes. Then, I added a little minced garlic with some herbs, salt & pepper and let it cook in the crockpot all day while I was at work.
After I got home, the only thing left to do was add the spinach, cream & ravioli and let it cook for another 30 minutes, and that's it! Lazy day recipes just don't get much better than that!
Soup is one of the easiest meals to deliver to someone who is sick or in need of a pick-me-up. Just scoop some out into a container, and pair it with a pre-packaged bag of salad, garlic bread and some cookies or brownies--very little effort but the result is a MASSIVE amount of joy for the recipient of your kindness.
