How’s the weather where you live? Here in Mississippi, things are beginning to heat up a bit, and I love everything about it! Swimming. Camping. Eating watermelon at the picnic table. Watching the brightest, most beautiful flowers growing in my own back yard. I could continue on for days, but to spare you some time, I just LOVE this time of the year.
This year, when April rolled around, I began thinking about creating this super yummy strawberry lemonade. I planted some fresh mint and have been watching it take off ever since, and it is FINALLY time!! Next thing on my list with this magical herb is homemade mint-chocolate ice cream, so stay tuned for more summery goodness coming soon. Until then, this minty-fresh strawberry lemonade will keep your taste buds occupied; I promise!
You’ll start by blending a handful of fresh strawberries with a few frozen strawberries. Then, muddle some mint in Crystal Light pink lemonade; pour it all in a pitcher over ice, finish it off with some Sprite Zero, and then try and see how long it lasts. I have a feeling it won’t be very long!!
1 cup fresh strawberries, capped
1 1/2 cups frozen strawberries
1 quart Crystal Light pink lemonade
1 quart Sprite Zero
fresh mint and chopped fresh strawberries for garnish
Blend fresh and frozen strawberries. You want the frozen strawberries to be small, so blend well!
Prepare pink lemonade in separate pitcher (this will not be the pitcher you use for your strawberry lemonade).
Pour blended strawberries in an empty, 2-quart pitcher, and use long-handled spoon to break up any frozen pieces that are sticking together.
Pour one quart of pink lemonade over strawberries.
Fill the pitcher to the top with Sprite Zero.
Pour lemonade over crushed iced and top with chopped strawberries and mint for garnish.
